Just a simple and yummy dressing. Originally it was made with maple syrup instead of yacon.

Yields: 1¾ cups
Ingredients:
- 1 cup olive oil
- ½ cup balsamic vinegar (aged is best)
- ¼ cup yacon syrup
- 2 tsp Dijon mustard
- Salt and pepper
Directions:
- Put it all in a 1 quart mason jar and shake well.
